Great Wholesome Holiday Meals For the Family

Although not for breakfast, below are a few wholesome healthy recipes and holiday meal ideas for the family.

1. Smoked Turkey Breast with Collard Greens: Ingredients include: 1.5 pounds collard greens, pound smoked turkey breast, cup chicken broth, minced onion, tsp. red pepper flakes, tsp. minced celery, and tsp. ground black pepper. Place the cut up pieces of collard greens and turkey in a pot. Cover them with water and cook on medium heat, covered, for 20 minutes. Add the onion, celery, red pepper flakes, chicken broth, onion, red pepper flakes, and black pepper, and cook on medium heat for approximately an hour.

2. Peppercorn Honey Mustard Pork Roast: Ingredients include: 1- pound pork loin roast, 1 orange, a 12-oz package of cranberries, 1/4 cup honey, 2 tbsp. honey mustard, 2 tbsp. crushed peppercorns, 1/2 tsp. 1 tsp. minced thyme, and 1/2 tsp. salt. Chop up orange and cranberries. Place in saucepan and blend in honey. Bring to a boil over medium-high heat and cook 3 to 4 minutes. Cool. Place the pork around the roast in a roast cooking pot. Mix the honey mixture and other ingredients in a bowl. Baste the roast and pork with the sauce. Cook at 325 degrees for 30 minutes. Remove and baste the meat. Cook for another 20 minutes. Let it sit for about 15 minutes and then serve.

3. Honey Mustard Glazed Turkey: Ingredients include: 5 pound turkey breast , 1/4 cup apricot preserves, 1 tbsp. honey-style mustard. Place turkey breast in roast pan. Bake for 2 hours at 325 degrees. In a bowl, blend the mustard and apricot preserves. Baste the glaze over the turkey breast and cook for another 20 min. Remove and serve.

4. Rib Eye Roast with Gravy, Potatoes, and Mushrooms: 1 tbsp minced rosemary, 2 minced garlic gloves, 2 tsp salt, 1 tsp ground black pepper, one 4-pound rib eye roast, 4 pounds small potatoes (cut in small portions), 1 tbsp vegetable oil, 1 pound chopped white mushrooms, 1 tbsp butter, 1 tbsp all-purpose flour, 1 can beef broth, and 1 tbsp tomato paste. In a bowl, mix rosemary, garlic, and salt and pepper. Baste the roast. Cook for 40 minutes at 350F (175C). Add potatoes to the roast pan. Cook for another 20 minutes. Put mushrooms in the roast pan, swirl, and cook for another 40 minutes. Mix butter and flour together in a bowl. Remove roast and vegetables from oven. Remove food from the pan. Add beef broth to the pan juices, boil, and cook for 2 minutes. Reduce the heat and mix in flour mixture and tomato paste, and blend. Pour the gravy in a bowl. Slice beef and serve with gravy, potatoes and gravy.

Are you looking for great ideas for this week’s dinners? Try a meat lasagna one night. This delicious dish of Italy is a great meal when combined with a lovely salad and some tasty bread.

Meat lasagna is a combination of good pasta sauce, ground beef, mozzarella cheese, cottage or ricotta cheese and Italian spices. Each of the ingredients is layered in a pan and the lasagna is cooked until the cheese is melted and bubbly.

Different from other dishes with pasta lasagna can be baked without cooking the pasta before hand. Simply put the lasagna noodles in with all the wet ingredients as you layer it.It may have to bake a while longer, but it wont change how it tastes.

An alternative meat lasagna uses chicken, Alfredo sauce and also has vegetables in the layers of the pan.

If you prefer the lasagna without meat choose red or white sauce and substitute vegetables such as zucchini, spinach or even carrots. The veggies give the lasagna a great taste and are much lower in fat than meats are.

If you are really in the mood for lasagna but are trying to behave your self by watching those carbohydrates, there is an alternative. Just try your family recipe using steamed cabbage leaves as a substitute for lasagna noodles. It’s flavor is very similar to the traditional recipe and it could just trick those taste buds.

To bake the lasagna, you need a casserole dish that is at least three to four inches deep. Because of the noodle’s shape, rectangular and square pans work better.

If you do not have the deep dish pan, then you will find disposable aluminum lasagna pans at the grocery store. These pans are great for freezing a second lasagna for use at a later date. In addition, they make clean up a breeze.

Delicious pasta dishes are only a crock pot away. While it is true that pasta can be a bit tricky in the crock pot, with a little knowledge you will soon be turning out perfect pasta. There are several ways you can do pasta when you use the crock pot, and it all depends on what recipe you decide to make.

Putting on the Kettle

In some recipes, it is recommended to cook your pasta completely before adding it to your recipe. Alternatively, your crock pot contents might be served on a bed of noodles. You may find this works well with stroganoff, roasted meats with sauces, and other similar recipes.

Other recipes may suggest that you cook your pasta until it is just a little tender before adding it to the crock pot. The pasta finishes in the pot with the rest of your meal for the last half hour or so. This approach works well with dishes like casseroles, chicken Alfredo, and similar recipes. Because the noodles finish up in with the sauce, they will soak up the flavors and seasonings that have been cooking all day.

It is true that cooking your pasta separately takes more work on your part. Instead of just dishing up, you need to boil the water and cook the noodles. This method does make sure your noodles are just right, but it will not work with every crock pot pasta recipe.

Tossing it in the Pot

Some recipes are written for uncooked pasta. These recipes are less work for you in the long run, though you will still need to add the pasta towards the end in most recipes. You could use this technique if you were making Chicken noodle soup, minestrone or ramen. For normal pasta, you will want to add it into the crock pot between 30 to 60 minutes before serving. If you are making ramen, 10 to 15 minutes is sufficient to cook the noodles on the high setting.

Some recipes require you put the pasta in at the beginning, with the other ingredients. Crockpot lasagna is one example. You can also make an incredible macaroni and cheese in the crock pot, but do not leave it for eight hours. This is a recipe that will be done somewhere between 90 minutes and 2 hours. You can also make baked ziti, stuffed pasta shells, and other similar dishes. Be sure to watch the time on these dishes. They probably will not take all day to cook, and you do not want to end up with mush instead of pasta.

Pasta does just fine in the crock pot. All you need to do for success is to use the right approach for each recipe. Pasta is more delicate than something like beans, so keep an eye on the cooker until you know how the recipe will work. Sometimes it may take a few times to get it right.

Before you know it, you will be turning out delicious pasta meals for your family using your crock pot. Comfort food never tasted so good, or was so easy to make.

Everything You Ever Wanted to Know About Slow Cooker History

Crock-pots are in almost every kitchen. They sit on the counter or hidden away in a cupboard, collecting dust unless we are really strapped for time. In actuality, slow cooking has been used to prepare meals for hundreds of years. Today is so much easier; it is amazing this method is not used more often.

Way Back When

People have been slow cooking their meals ever since they learned how to smelt iron and make a pot. A large kettle could be simmering over the fire throughout the day, or a small, covered Dutch oven could be set into the coals for cooking. It has long been known that slow cooking has many benefits for our food. The downside to the old methods is the constant tending needed for the fire, as well as frequent stirring of the food.

Cooking on a low heat for many hours tenderizes tough meats through the softening of the fibers. The natural collagen also melts, creating a tender, delicious meal that is full of gelatin and nutrition. Long cooking times may also be beneficial to tough root crops, rendering them more digestible. Dried beans and lentils also benefit from a long cooking time on low heat.

The Crock Pot

In the’50s, Naxon Utilities Corporation of Chicago created the first slow cooker. It was called the Beanery All Purpose Cooker, and it was designed to help people cook baked beans. It was basically a ceramic pot that fit inside a metal pan with heating elements around the inside. This kept the heat even all around the food, but kept it out of direct contact.

Naxon was bought by Rival in’70. The Beanery was reinvented as the Crock Pot. During the’70s, more women were joining the workforce, and the Crock Pot helped them manage to feed their families as well. It was easy enough to fill it before they left for work and be able to come home to a hot meal.

As the years have progressed, so has the Crock Pot. Now they feature removable ceramic pots for easier cleaning and storage of leftovers. The old ones were a single piece, making cleaning difficult due to the attached electrical cord. The new ceramic liners are even dishwasher safe, making them even more convenient for busy families. Many of the newer slow cookers also feature a warming setting as well as Low and High. Some are electronic and will automatically switch to warm when the food is done.

In the old days, women used slow cooking to make many different foods. Today, crock-pots are even more convenient. You can make roasts, stews, beans and all sorts of tasty meals in your slow cooker, even some more complicated dishes including lasagna, pulled pork, and seafood chowders. You can even cook homemade chicken noodle soup in a crock pot very easily. Almost anything can be made in a crock-pot.

You can also emulate your ancestors and bake breads by slow cooking. The more you use your crock-pot, the more creative you will get. You may even try desserts and dips if you get adventurous.

When you want to try a white chicken chili soup recipe, you will be delighted with the results. It is full of spice, vegetables, garlic and chicken. Use it as an appetizer or a full meal. It is easy to prepare a day ahead. Just refrigerate it and reheat as necessary.
